Potato Candy
1 small potato, peeled and cooked
confectioner's sugar
peanut butter
Mash the potato in a 1 quart bowl.
Add confectioner's sugar until mixture is of the consistency of pie dough.
Roll dough out on waxed paper to the thickness of pie dough.
Shape into a rectangle.
Spread with thin layer of peanut butter.
Roll up from one long side and then cut slices 1/4" thick.
They're ready to eat
