Potato Candy

  • 1 small potato, peeled and cooked

  • confectioner's sugar

  • peanut butter

  1. Mash the potato in a 1 quart bowl.

  2. Add confectioner's sugar until mixture is of the consistency of pie dough.

  3. Roll dough out on waxed paper to the thickness of pie dough.

  4. Shape into a rectangle.

  5. Spread with thin layer of peanut butter.

  6. Roll up from one long side and then cut slices 1/4" thick.

  7. They're ready to eat
